Growing up close to Mexico I have a love for Mexican food. As with most things, I enjoy taking an idea and making a few changes to make it fit our funky taste and desire to be healthy a little better. This is one of those dishes :)
1 lb Grassfed Beef
2 Tbsp Grassfed Butter
Sea salt to taste (we use Real Salt), about 1 tsp
Frontier Organic Chili Spice Blend to taste, about 2 tsp
Garlic Powder to taste, about 1/2 tsp
1/2 c Millet
1 c Filtered Water
1 large Organic Tomato, diced (don't need those GMO's right?)
Monterey Jack Cheese, sliced or freshly shredded
Full Fat Sour Cream
Melt butter in a skillet, add beef and seasonings. Place millet in another pan, toast lightly then add water. Cook until both items are cooked through. Mix together to make filling. While cooking, dice tomato and prepare cheese. Put filling items into tortillas, fold and enjoy!
